$5,000 Backyard BBQ - 07/30/08
July 30, 2008
Blogher, in congjunction with Old Bay, is giving away a $5,000 backyard bar-b-q! I would love to win this, so… my ode is below…

Gramps favorite spice is Old Bay
He’s a Cajun and prefers it over Tony Chachere’s (pronounce sasheray)!
Do you believe that chere?
No! His friends are all in shock…
But, the proof is right there…
In the big black pot…
He’s sprinkled Old Bay on his red beans and rice.
Then he just popped open the bright can,
And poured out the spice
directly into his boudin (pronounce boodan)!
I’m tellin’ no lie, believe what I say…
it’s just plain shameful that a Cajun only likes Old Bay!
Gramps says there’s nothing like Old Bay
in a big bowl of seafood etoufee (pronouce et two fay) ,
or just a pinch in the jambalaya,
to make ya want to cry-ya.
Gramps puts Old Bay on his gator…
and even on his potatoes…
and his gumbo’s not complete
without a dose of the Old Bay treat
I wonder at his craving every day,
Is it the bold flavor…
Or is it the tasty crawfish he savors?
Oh, what have you done Old Bay?
And, did I mention Mardi Gras (pronouce mardy graw)?
Gramps is bound to embarrass us all!
What self-respecting Cajun or Creole
would dare to cook with a non-Louisiana spice?
But I must admit he might be right… his Lemon Chickidee with Old Bay tastes out of sight!
I’ve got to draw the line somewhere, it’s getting out of hand!
He can’t seem to function without that red & yellow can!
Gramps original LEMON CHICKIDEE with OLD BAY recipe
- 1 2/3 c long grain rice, uncooked
- 6 oz water
- small can of sliced black olives, drained
- 10.5 oz condensed chicken broth
- 2.5 tsp Old Bay
- 1 T fresh lemon juice
- 6 sknless, boneless breast halves (or 3 leg quarters)
- 6-7 oz diced tomatoes
- few extra dashes of pepper
In an oblong baking dish, combine rice, tomatoes, broth, olives, water, 1.5 tsp Old Bay, pepper and Lemon juice. Evenly arrange chicken on rice, covering half way. Sprinkle the remaining 1 tsp of Old Bay on top of chicken. Cover with foil and bake at 375 for 35 minutes covered, then 35 minutes uncovered. Adjust cooking time depending on boneless breast or leg quarters being cooked. Bake until chicken is no longer pink.
Serves 6.
